So I offered my cupcake making services for my cousin’s daughter Riley’s christening. And it wasn’t until Friday night that I got a little nervous. Silly but true. I had planned vanilla cupcakes with rosewater and pink food colouring with royal icing. Pure white. And about a dozen plus to take and some for Hubby’s lunch.
And I started cooking and found there was no where near enough pink. So I went with purple food colouring. And the batch ended up producing well over 36 cupcakes. I used a Nigella Lawson recipe available on her website. All going well as I switch my single cupcake tray in and out of my oven for well over an hour.
And then I started the icing. Three attempts later and I had something resembling royal icing and the cupcakes were stone cold. It turns out, I later found out, it still need more confectioners suger as it was still toooooo runny. Runny ok. Too runny, not.
So to pretty them up I fashioned a bunch of punched out scrapbooking flowers and birds etc on toothpicks. With a plan to whack them in the top. Hiding my icing shame. And it worked. Don’t you think…? They tasted delish and were a hit with adults and children alike. When we left there were only two surviving cupcakes stashed in the kitchen for my cousin and her Hubby to enjoy later.
Mission accomplished. A little off track but accomplished none the less.
