My Hubby King of the Kitchen

When Hubby first started working from home full time I would often swan into work with a freshly prepared lunch and snack and sometimes even my breakfast. All thanks to his early morning preparation. Bless. Because let’s face it, nothing tastes as good as something that took zero effort to prepare. 
And my favourite part of these packed lunches is a salad. I know, shock horror! A very special salad. Simple and always prepared with love. By love I mean it takes him ages to chop and cut and grate his way to the perfect salad. And oh boy. All that peeling and chopping and grating, it leaves a mess resembling when fruit trucks overturn on the highway. But it is so worth it. And since I can’t show you a picture because I never leave it on a plate long enough to photograph it, here are the ingredients.
Hubby’s Super Salad
half a raw beetroot
(chopped or grated)
a small raw turnip 
(grated)
half a capsicum
(i think my american friends would call them peppers)
one medium carrot 
(chopped or grated)
red onion
(amount to taste – chopped finely)
half a avocado
(as much as I can get my hands on)
handful of sprouts 
(all varieties)
half a cup of tomatoes
(whatever you’ve got – usually grape or cherry tomatoes here)
and because I love them kalamata olives
Other things that work include cabbage (all colours and varieties), corn off the cob, mushrooms, shallots, lettuces of all varieties (except iceberg because I have a personal vendetta against the ickiness of iceberg lettuce) and adding proteins such as egg, ham, chicken or even tuna. 

To finish it off add dressing if you want, or a squeeze of lemon or a dollop of whole egg mayo. It all works. And eat it immediately. Before the beetroot turns everything bright pink. Which, FYI, it will do anyway.

  1. If you are ready to decorate your kitchen, don’t start off with the most expensive products. Be simple. By just adding well designed, proper color and well finished Kitchen Cabinets into your kitchen you can feel the difference. It will bring entire change in the looks of your kitchen. It will make you feel as if you have come into a new kitchen.

  3. That sounds delicious. I'd love to find a husband as great in the kitchen as yours. I'll have to live with having a pretty decent wife in the kitchen.That was the most bizarre comment I have ever made on a blog.

  5. That salad picture looks totally delicious. I haven't had a packed lunch in years. I work the morning shift and I'm always home by lunchtime, so get to cook up anything I fancy. Usually just a sandwich though, with varied fillings according to what's in the fridge.
