This one is a family favourite. We make it by the large pot full and freeze it when we just can’t eat any more of it. It’s a simple chicken soap base with lots of Thai flavours added. I do this usually by using the Gourmet Garden Thai herb mix as a base and boost it with curry paste and loads of garlic, chilli and ginger. You should adjust this to your tastes.
You’ll need;
- Chicken {500gm}
- 2L chicken stock {have more on hand}
- 2 cups of Pumpkin soup
- Gourmet garden Thai herb mix
- Ginger
- Garlic
- 1 medium chilli
- 1 lrg onion
- Sliced or diced carrots, celery, cabbage
- 1 floret of Broccoli – chopped
- Noodles
- Fresh coriander
Then do this;
- Fry off curry paste, herb mix, garlic, ginger and onion
- Add chicken to brown
- Add stock
- Simmer until chicken is soft
- Add diced or sliced vegetables and pumpkin soup
- About 5 minutes before the end add noodles and broccoli {I like mine crispy and green}
- Add fresh coriander to serve
And there you have it. A super winter soup that will keep the whole family happy and healthy.
