Now the Thermomix has become pretty darn essential to me. And when it comes to desserts, it’s the boss. Hands down. And this creamy, thick custard takes the cake. Or makes the cake as the case may be. So this recipe is one that gets a work out around here as a stop-gap to Hubby’s constant requests for profiteroles. Something about this custard just cures that craving for him. Thank goodness!
You’ll need
- 2 eggs
- 500g milk
- 60g sugar
- 50g flour
- 1 tbsp vanilla essence
- 2 tbsp thickened cream
- zest one lemon {and a squeeze or two of juice won’t hurt}
Then you do this
- Ā Place lemon {rind only}, sugar and flour into TM bowl and pulverise for 20 seconds on speed 9.
- Scrape down the side of the bowl.
- Add remaining ingredients, cook for 7 minutes at 90 on speed 4.
- Cook for a little longer if you want thicker {no more than 4 more minutes in my experience}
- Immediately transfer to a serving bowl orĀ cleaningĀ will suck
Head on our there Thermo friends and enjoy this fabulous, slightly modified custard. My other readers may just like to cut out the vanilla and add lemon instead for a tarty, creamy, seriously good custard experience. And you know me, lay off the sugar too, ok.

Sorry to hear that. Custard rocks! The Thermomix isn’t necessary, just do a bunch of stirring on the cook top. How’d you go with Google?
Always homemade, but I must admit, I tend to use the custard powder! Might try to REAL real custard soon, once I can drink milk again.
