OMG, Yes. This is all kinds of awesome. You are NOT going to regret this one. Make it in advance. It seems to just let the flavours or soak through the rice and makes it super delicious. It also means that you can give the brown rice as long as it needs. I put mine in the Thermomix for 45minutes to steam it’s but off. It’s perfect every time. Clearly, this isn’t possible for everyone. But, I say it to drive home the point that there’s nothing worse than under cooked brown rice.
You’ll need to make a week of lunches;
- Salmon or tuna {or both!} – canned or fresh – 2 fillets or 1 regular sized can
- Brown rice – 2 cups cooked
- Broccoli – 1 floret {at least!}
- Ultimate Coleslaw salad mix including carrot, cabbage, beetroot {$3 from Coles}
- 2 table spoons of light soya sauce
- Olive oil {spash it around until your happy}
- Parsley, basil and whatever else you like {to taste}
- Salt & Pepper {to taste}
Get them all together and mix them around. Hey presto you’re done. I didn’t cook the broccoli because when heat the salad for a minute or two at lunch it seems to cook it enough for my taste. So of you go, enjoy and pat yourself on the back for being so awesome and healthy.

I love a mix of olive oil and soy sauce. It works with both hot and cold. Have you ever used canned salmon? I’ve never had it and fear it has bones. Or eyes!
I have. It’s different. I prefer salmon fresh, cooked prior and refrigerated. But it’s editable. For sure. It does have same bones though.
Actually, I might just do this with tinned chicken and avocado! I love variations 😀

Simple salads like this where you don’t have to cook anything are the very best things to have for lunch! Quick, simple, and there’s no excuse for not doing it because all you have to do is throw everything into a container!
Too bad I can’t eat seafood, and I don’t like broccoli, otherwise I would be SO all over that!
