This is a perfect meal for a couple {like us} or a crowd {like the one I had here during the footy last month}. You see you just keep buying chicken pieces until you have enough for one per person. Two if you use little thighs or your guts are big eaters. The cooking time barely changes and you just keep making more of the tomato sauce {recipe is enough for 4-6 chicken thighs}. And once it’s in the oven, you’re free to sit down and have a glass of wine. It’s THAT easy, super tasty and thus, impressive. It just doesn’t really look it. If you get my drift.

You’ll need;

  • Chicken – Breast or thighs
  • Bacon – 1x piece per chicken piece
  • 1 can crushed tomatoes
  • Basil – 2 tablespoons
  • Onion – Half red onion diced
  • Garlic – Loads – or to taste
  • Cheese – Tasty or anything melty
  • Olive oil

Then you have to;

  1. Oil a baking dish {I use paper too to make cleaning just that bit easier}
  2. Roll chicken pieces in a strip of bacon {secure with toothpick if required}
  3. Place into baking dish
  4. Combine tomatoes, basil, onion and garlic
  5. Pour our chicken pieces
  6. Top with cheese
  7. Bake on 200 degrees for about 40 minutes or until cheese it melted and golden brown
  8. Drain liquid, allow to sit while you prepare you other veggies or salad
  9. EAT THEM. They’re SO good.
