For breakfast I find it difficult to find sugar-free options to grab and dash off to work with. So every now and again when I want something a bit sweet {hence the blueberries} I make some of these babies. A simple blueberry muffin. I use dextrose instead of sugar and add the blueberries to the top of the muffins before baking. It’s my way o keeping my fruit intake in check. It’s hardly necessary, but it satisfies my control issue. For those wanting to do some baking, pop over and check out Donna Hay’s Too Easy Blueberry Muffins. She sprinkles raw sugar on top for that sweet crust. I wouldn’t recommend it for those who are sugar-free. But for those that aren’t apparently it’s amazing.
