This one is a family favourite. We make it by the large pot full and freeze it when we just can’t eat any more of it. It’s a simple chicken soap base with lots of Thai flavours added. I do this usually by using the Gourmet Garden Thai herb mix as a base and boost it with curry paste and loads of garlic, chilli and ginger. You should adjust this to your tastes.

You’ll need;

  • Chicken {500gm}
  • 2L chicken stock {have more on hand}
  • 2 cups of Pumpkin soup
  • Gourmet garden Thai herb mix
  • Ginger
  • Garlic
  • 1 medium chilli
  • 1 lrg onion
  • Sliced or diced carrots, celery, cabbage
  • 1 floret of Broccoli – chopped
  • Noodles
  • Fresh coriander

Then do this;

  1. Fry off curry paste, herb mix, garlic, ginger and onion
  2. Add chicken to brown
  3. Add stock
  4. Simmer until chicken is soft
  5. Add diced or sliced vegetables and pumpkin soup
  6. About 5 minutes before the end add noodles and broccoli {I like mine crispy and green}
  7. Add fresh coriander to serve

And there you have it. A super winter soup that will keep the whole family happy and healthy.

    Yum! Definitely making this one 🙂

    Looks delish!! I might cook that one up for dinner tomorrow night. I might even share it 🙂

  • I bought all the Ingredients i didnt have yesterday. Looking forward to tasting it!

    • Ooooo Emma! I wish I had a bowl right now. It’s cold and I’m hungry. Enjoy!!

      • I finally made it. Have not been in a cooking mood of late. I didn’t keep it chunky but blitzed it (so the hubby couldn’t see how many vegies were in there – yes, he is ONE OF THOSE) and we put the noodles in as we heat up the soup. I will be making it again and again, thank you for such a great recipe packed with Vegies!!!

        • Great news Emma. And blitzing it would be good too for when you just don’t feel up to chewing or wanted to eat with a warm pita bread or something. Yum, yum. Glad you enjoyed!
