Let's get ready to online cook people! 🙂

Now I make a mean lazy bacon and egg pie. You know the one where you just wind the bacon around and crack some eggs on it? Yeah, that. But I was flipping through the April 16th New Idea magazine and they had a full blown recipe for bacon and egg pies. So how could I not pit them against the lazy girl pie?

Eggsactly.

So, what you’ll need to bake along side of me is;

Pastry {or buy cases and forget this bit}

  • 1 1/2 cups plain flour
  • 125g cold butter, chopped
  • 1 egg yolk
  • 1-2 tablespoons water

Filling

  • 1 teaspoon oil
  • 150g rindless bacon, chopped
  • 1/4 cup finely grated parmasan
  • 6 eggs
  • 1/2 cup pure cream
  • 2 egg yolks
  • 2 tablespoons finely chopped parsley
  • Salt & pepper to taste

To make the pastry;

  1. Place flour and butter in a food processor and process until a fine crumb
  2. Add egg yolk and enough water so the mixture comes together into a ball.
  3. Roll out the pastry between sheets of baking paper until 1/2cm thick
  4. Using a cutter, cut out rounds to place into your mini oiled pie dishes {or one big Bertha like I did}
  5. Chill for 30 minutes
  6. Blind bake them for 10 minutes in a 200 degree oven
  7. Allow to cool slightly before filling.

To make the filling & finish the pie;

  1. Brown off the bacon
  2. Add to pie
  3. Crack an egg into each pie dish {or all over the shop if making a single pie}
  4. Combine cream, yolks and parsley in a small jug
  5. Pour into pie case until almost full
  6. Season with salt and pepper
  7. Cook in a moderate oven {180 degrees} for 20 minutes or until centre is almost set.
  8. Remove from oven, sprinkle with remainder of the parmasan.
  9. Cook for a further 5minutes or until cheese is golden.

Now, omg, eat them! Eat them, eat them, eat them. So good with a green salad for lunch or dinner. They take a whole heap of effort, compared to the lazy girl pie, but it’s SO worth all the fiddling. So worth it. I’m thinking this would be great for picnics or days at the beach too. Prepare them and off you go. Let me know if you give them a go, and whole you ate yours?
